JOHN SHIELDS
FOOD VLOGGER
If you thought I had chosen creating and writing about food as my vocation, then you would be wrong. With my dinner parties, family cooking, experimenting with flavours and attending cooking classes - it was the vocation that chose me!!
Harvesting and eating vegetables not 30 minutes after you have picked them is truly special and only really doable if you or a kindly neighbour, has a garden. But the difference in flavour is stunning. Doing your own composting and using an organic seaweed plant food is a simple and effective way to ensure all your produce shouts flavour. Tomatoes are sweeter, capsicums are juicy and chard is full of vitamins and minerals. I'm not saying this is the only way, but for 15 years now it has been the way I can bring joy to my hand picked food.
Anyone can experiment to find that perfect recipe by using micro quantities to start with. Make all your ingredients 1/10 of what they would normally be. If the dish is a success then multiply by 10. If it isn't, give it to the dog and start again.
