Asparagus And Strawberry Salad

I can honestly say I am in love with this Asparagus And Strawberry Salad. This is a vegetarian version, but it can have stir fried rump steak or chicken added to it as well. I prefer this version because of the contrast of sweet and savoury, as the vegetables contrast with the sweetness of the strawberries and oranges. This will take just 30 minutes, including prep and eating. Perfect for a healthy meal in a hurry, any time of the day.

A Very Stylish Salad

Asparagus and Strawberry Salad is a refreshing, light, and visually stunning dish that combines the crisp texture of asparagus with the sweetness of strawberries, often balanced by a touch of acidity in the dressing. This salad, while not traditional, embodies the essence of seasonal eating, often enjoyed in spring or early summer when both asparagus and strawberries are at their peak.

INGREDIENTS FOR ASPARAGUS AND STRAWBERRY SALAD

  • Vegetables in order:
  • 2 cup Mesculin salad greens chopped
  • 8 cherry tomatoes quartered
  • 1/2 red onion very thinly sliced
  • 5 large strawberries quartered
  • 1/2 sweet navel orange chopped
  • 1 whole bunch asparagus sliced
  • 1/3 red capsicum thinly sliced
  • 1 tbsp butter
  • Dressing:

  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp Italian red wine vinegar
  • The Flavour Profile

This salad typically features fresh asparagus and ripe strawberries as its base ingredients, with optional additions that enhance both flavor and texture. The contrast between the earthy, slightly bitter taste of asparagus and the sweet, juicy strawberries creates a harmonious flavor profile.

    Preparation Is Key

Blanching the Asparagus: The asparagus is often briefly blanched, which softens it slightly without losing its crunch and vibrant color. It can also be grilled for a smoky flavor if desired.
Slicing the Strawberries: Strawberries are usually sliced or halved, making them easier to eat and allowing their juices to mingle with the vinaigrette.
Tossing the Salad: The ingredients should be gently tossed just before serving to ensure freshness and prevent the strawberries from becoming too soft.
