I love baked potatoes, but I don't love the carbs that come with potato. What if you could take away half of the potato and replace it with tasty vegetables and spices. Then you could have your baked potato and eat it too.
Ingredients for Baked Potatoes Low Carb Version
2 medium large potatoes washed
1/2 red capsicum finely chopped
1/2 brown onion finely chopped
3 cloves garlic finely chopped
4 florets of cauliflower
2 tsp Ras El Hanout
1 tsp yellow mustard seeds
Pinch of cayenne pepper
Rice bran oil
1 tbsp butter
1 cup grated cheese
2 spring onions chopped finely
Sour cream or natural Greek yogurt for serving (optional)
