When you are faced with a rainy day, making a luxury pie to have with a cup of coffee, hits the spot just nicely. The mushrooms, cheeses and caramelized onions combine with the rich beefy mince, gravy and puff pastry to make the ultimate treat. The first time I made these pies I at two of them back to back, they were that delicious. Making a double batch of these would be a great idea as they freeze easily and make a perfect standby meal. Below are all the ingredients that you'll need to make a beef mozzarella and onion pie.
BEEF MOZZARELLA AND ONION PIE
350 grams of pre rolled puff pastry
500 grams of minced beef
6 medium sized button mushrooms finely chopped
2 onions chopped roughly
1/2 tbsp butter
1/2 tbsp rice bran oil
2 salt reduced beef stock cubes
200 mls of hot water
2 tbsp cold water
1 tbsp cornflour
75 grams of fresh Mozzarella cheese
60 grams of grated edam cheese
1 egg and 1 tbsp water whisked together for egg wash
