Christmas Fruit Scones

Hand on heart these are the best fruit scones I've ever made and eaten. Light and moist and doubled in height from the cold dough. Serve these with whipped fresh cream, your favourite jam or conserve and some fresh fruit, I recommend fresh strawberries and blueberries. Just make them and thank me later, you'll be raving about them for weeks. Ingredients:
  • 500 grams self raising flour 10.5% protein preferred
  • 2 heaped tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp raw sugar
  • Sift all above ingredients twice
  • 150 grams salted butter
  • 1/4 cup of dried cranberries
  • 1/4 cup of raisins
  • Slowly add milk keeping a very stiff dough.
On top and to the side:
  • Strawberries Barkers blueberries and cranberries conserve
  • 150 ml of fresh full fat cream
  • 1 tsp sugar
  • Icing sugar for sprinkling.
 

To complete that Christmas look you can add some sprigs of Italian flat leaf parsley so you have that lovely trio of red white and green colours on the plate.  The key here is to get the best quality preserves you can to top your light fluffy fruit scones with.  If you are after some other quick and testy recipes, then try these air fryer recipes below.
