Not many people have been punished for running to the dining room table, when the cook yells out Couscous Salad!!! More likely, there is a traffic jam in the driveway as people jockey to leave the postcode. But just the dressing alone for this will have you openly salivating in front of your peers. Have this as a meal in itself or add it as a side to create a little excitement, for your now captivated guests.
COUSCOUS SALAD INGREDIENTS
THE DRESSING
1 tbsp of runny honey
1 tbsp of mild mustard
1 tbsp balsamic vinegar
Juice of half a lime
Zest of a whole lime
2 tbsp red wine vinegar
THE MAIN EVENT
1 cup of dry couscous
3/4 cup boiling water
Combine and leave for 5 minutes only and then fluff with a fork
