Sometimes all you really want is a filling but healthy salad for dinner on a summers evening. This new twist on a Greek salad ticks all the boxes for me. It has asparagus and many of my other favourite vegetables and if you fancy more crunch, you can always add some croutons to this. Another vegetarian dish you can now add to your cooking armoury. MAIN SALAD INGREDIENTS:
  • 1 big handful of baby spinach leaves
  • 1 cup of chopped sweet potato
  • 6 full spears of asparagus sauteed
  • 1 tbsp butter
  • 8 cherry tomatoes halved
  • 10 black olives halved
  • 70 grams of Bulgarian cows cheese or feta
  • 1/3 cup of beetroot sliced
DRESSING:
  • 2 tsp melted honey
  • 2 tbsp of American mustard
  • 2 tbsp red wine vinegar

Outside Greece, "Greek salad" may be a lettuce salad with Greek-inspired ingredients, even though the original dish is distinguished by the absence of lettuce. Meanwhile, the variant without lettuce may be called horiatiki, 'peasant salad', or 'village salad'. However in most European countries, including the UK, the dish broadly resembles the original, albeit often with non-Greek substitutions such as another cheese since Feta cheese enjoys protected designation of origin status.
