Keto Mushroom Quiche
The big stumbling block to cutting out carbs, has always been the flour in pizza, bread and pastry. For the humble quiche I have found a work around. The Keto Quiche Mushroom. A vegetarian no pastry quiche that uses the mushroom itself to hold the quiche filling. If you are not too worried about the carbs, then try these served on toast with some Hollandaise sauce are a superb start to the day as breakfast. I've used cheddar cheese here, but blue cheese or camembert works just as well to give the dish a different flavour profile.
Ingredients for Keto Mushroom Quiche
30 grams cheddar cheese
4 large Portobello mushrooms
1/2 Red onion chopped
1/4 red capsicum finely chopped
2 garlic cloves, crushed
2 eggs
2/3 cup cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon Nutmeg
1 teaspoon oregano
1 teaspoon thyme
1 tablespoon rice bran oil
