Korean Sweet Spicy Chicken

Ingredients

  • 750g chicken thighs cut into bite size
  • 1/2 tsp salt
  • 3/4 tsp black pepper
  • 1/2 cup corn flour
  • 1/4 cup all plain flour
  • 1/2 tsp baking soda
  • 2 large eggs beaten
  • 1 tbsp toasted sesame seeds
  • For The Sauce
  • 2 tsp rice bran oil
  • 4 garlic cloves crushed
  • 1/3 cup tomato sauce
  • 2 tbsp Kecap Manis
  • 2 tbsp gochujang paste
  • 2 tsp white vinegar
  • 2 tbsp honey
  • Oil for frying
  • For garnish:
  • 2 tbsp chopped coriander leaves
  • Pickled red onions

It’s made from a mixture of red chili pepper flakes, glutinous rice (which gives it a sticky, thick texture), fermented soybeans, and salt. The paste is typically aged in large earthen pots outdoors for an extended period, allowing the flavors to deepen and meld.
