You can dream of Focaccia being made at your favourite bakery, or you can get up early and as the dawn chorus begins, watch your yeast come alive. Eating your breakfast as the dough is developing its flavour. Finally, as you near midday, choose all the fresh ingredients to go inside your freshly baked Focaccia. This is the reward, for daring to dream. let's get cooking...........

PEPPERONI FOCACCIA SANDWICH

  • 150 ml warm water
  • 1 tsp sugar
  • 5 grams active yeast
  • 250 g plain flour
  • 2 tsp dry oregano
  • 2 tsp dry thyme
  • 1/2 tsp salt
  • 1 tbsp rice bran oil
  • FOCACCIA TOPPING

  • 1/3 Brown onion chopped finely
  • 8 - 10 tsp medium salsa
  • 15 black olives pitted and halved
  • Dusting of roast vegetables seasoning
  • Drizzle of extra virgin olive oil
  • Freshly grated parmesan cheese
  • SANDWICH FILLING

  • Slices of pepperoni
  • Fresh tomato chopped
  • Baby spinach leaves
  • Mild mustard
  • Edam cheese
