Sometimes you just don't use as much food as you buy. You open the fridge or pantry door and you see fresh ingredients begin to age. Well, here is a recipe that helps take care of this dilemma. What is more, this freezes so easily and is a great standby, for those evenings when you don't feel like cooking.
Shepherd's pie is a traditional British dish made from minced meat, usually lamb, topped with mashed potatoes and baked until golden brown. I have adapted a simple recipe to make shepherd's pie at home, into a more flavour filled family favourite. I've made this recipe well over 300 times now and can tell you that it tastes even better on a cold winters evening.

Ingredients for Shepherd's Pie:

  • 350 grams minced lamb
  • 1 cup of cauliflower florets
  • 1 cup of broccoli florets
  • 2 medium carrots grated
  • 1 cup of white button mushrooms sliced
  • 1/2 leek finely sliced
  • 1 tbsp of butter (for leeks)
  • 1 tbsp rice brown oil
  • 1 brown onion finely chopped
  • 1/2 red onion finely chopped
  • 3 cloves of garlic finely chopped
  • 5 medium agria/russet/maris piper/melody potatoes
  • 1 tbsp of butter (for potatoes)
  • 1 and 1/2 cups of grated cheddar cheese
  • A sprinkle of smoked paprika
  • 2 tbsp Worcestershire sauce
  • 1 tbsp reduced salt soy sauce
  • 2 tsp of mild curry powder
  • 1 Oxo reduced salt beef stock cube
  • 2 - 3 tbsp rich brown Bisto gravy mix
  • Salt and pepper to taste
  • 500ml hot water
