Bread is always exciting to make, especially this Spiced Fruit Loaf. The flavour from this loaf of bread is out of this world. Once you made this, you will never buy a spiced fruit loaf from a shop again. a couple of slices of this loaf with butter in the morning, or for afternoon tea, is just heaven.
INGREDIENTS FOR SPICED FRUIT LOAF
200 ml warm water
20 ml warm milk
20 grams caster sugar
7 grams active yeast
*Combine the above and wait till it foams
360 grams plain flour
2 tbsp rice bran oil
1/2 tsp salt
2 tsp mixed spice
1 tsp cinnamon
1/2 tsp ground cloves
*At the end of kneading add the fruit
1 and 1/2 cups fruit cake mixture
( fruit cake mixture is a mix of sultanas, candied peel, currants and glace cherries)
Cook in the middle of the oven at 180 degrees C for 25 - 30 minutes.
