Super Food Salad

This super food salad is like a boost for your body. You can add to it with my optional suggestions as well as making it vegan by using tofu, instead of meat. Your body will love all the vitamins and nutrients from this wide range of vegetables and fruit. With very few carbs and also gluten free, this salad will not leave you feeling bloated.

Ingredients for The Super Food Salad : Your Body Will Thank You:

  • A generous handful of baby spinach leaves chopped
  • 1 tomato chopped and drained
  • 1/2 carrot finely grated
  • 6cm cucumber peeled and sliced
  • Small handful of mung bean sprouts
  • 1/4 mango diced
  • 1 large mandarin segmented ( or navel oranges )
  • 1 spring onion green end sliced on the angle
  • 1 sprinkle of fresh basil leaves
  • 100 grams of tofu/chicken thigh/thinly sliced rump steak
  • Moroccan seasoning Ras El Hanout
  • 1 tbsp extra virgin olive oil
  • 50 grams of cow feta cheese crumbled ( optional )
  • 3 tbsp cubed beetroot ( optional )
  • 1/2 an Avocado sliced into cubes ( optional )
  • 100 grams of strawberries halved ( optional )
  • Dressing ingredients:

  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp red wine vinegar
