These Sweet Potato Dinner Rolls are very similar to Brioche rolls and go really well with turkey, chicken, pork, ham and lamb. Anything that takes a sweet sauce will shine with these really tasty rolls. The initial knead is cumbersome, but that can be solved by a bread maker or stand mixer. The recipe below makes 15 dinner rolls at a total cost of NZ$6.60 (November 2024).
Ingredients:
375 grams of peeled orange sweet potato (golden kumara in NZ)
135 mls cup low fat milk
50 mls warm water
7 gram packet active dry yeast
2 tbsp granulated sugar (plus 1 tsp for yeast starter)
2 large eggs
4 tbsp butter melted
2 tbsp butter melted (for glaze)
4 1/2 cups bread making or high protein flour
1 tsp salt
2 tbsp honey

Do Sweet Potato Dinner Rolls Freeze?
These rolls are also freezer-friendly! Let them cool completely after baking, then freeze. Reheat in the oven when ready to serve. Do not microwave as this will make them chewy.
