After talking to a friend of mine during a scrabble game, I was reminded of her favourite comfort food, a British Classic, Bangers And Mash. Taking time to choose only top quality beef sausages or bangers, making sure you caramelize the red onions the traditional way and adding cheese to the mash is vital to take your meal to the next level. Come with me and I will show you my version of this wonderful treat.
  • 1 X 500 gram packet of beard Brothers Classic beef sausages
  • 4 medium potatoes for mashing
  • 2 large red onions sliced
  • 2 heaped dessert spoons of Bisto Supreme ( or your favourite gravy mix)
  • 400 mls of hot water
  • 2 cups of frozen baby peas
  • 15 grams of butter
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp of pink salt
  • 100 grams or 1 cup of grated edam cheese
    Mixing 2 Oxo cubes with 300mls of boiling water , thickened with 2 tbsp of cornflour dissolved in cold water makes for a very strong gravy for the onions as well. The reason for the cheese in the mash is not only the taste, but it helps to thicken the texture of the mash. This in term helps to attract the gravy. Have you noticed that all the best meals have their own special gravy? I tell you, it's no accident.
