The Breakfast Burrito
The Breakfast Burrito for you, is flavourful, loaded with fresh vegetables, warming to the soul and isn't afraid of bacon. On my journey to reduce my meat intake, bacon has been the hardest to say no to. So I'm saying yes, but eating more plants in between. The only chili and garlic in these is in the salsa. I love garlic, but not first thing in the morning. Okay, enough talk, let's get cooking.1) Fry red onion, red capsicum and bacon in rice bran oil till cooked. Set to one side but keep warm.
2) Scramble your eggs, season and set aside. Keep warm.
3) Grate both potatoes and then squeeze dry. Cover base of non stick pan with cooking oil. Once hot cover with grated potato and press down firmly. Flip and make into a pancake. Cut in half and set aside in a warm place.
4) Assemble all ingredients and microwave tortilla for 10 seconds.
5) Build your burrito starting with scrambled eggs, onion, capsicum and bacon. Then lay across half hash brown, chopped baby spinach leaves, grated Parmesan cheese and top with salsa.
